# Rajma curry recipe
Soak dry kidney beans overnight then cook (slow)
Or use canned, nearly as good.
- 1 large onion or two small
- 1 teaspoon cumin seeds
- Garlic
- Ginger
- 2 cans tomatoes, or equivalent fresh
- Spice mix (grind all together):
- 1/2 teaspoon turmeric
- 3 teaspoons coriander
- 1 teaspoon ground red chilli
- 1 teaspoon garam masala
- 2 pinches asafoetida
- Salt
- 2 cans kidney beans
- Fenugreek leaves (kasuri methi)
Fry the onions in oil until deep golden brown. It's vital to cook the onions for ages. Chuck in the cumin seeds part way through.
Add grated garlic and ginger, cook briefly.
Add tomatoes then all the ground spices.
Simmer the sauce down for a while on medium heat. Salt to taste.
Add the kidney beans and leave to simmer on low heat while you go do something fun for 1/2 hr.
Mash some of the kidney beans in to make it creamier.
Stir in fenugreek leaves, cook a minute more then serve.
